The blade is first coarsely ground using a vertically rotating sharpening stone, followed by a fine honing using a horizontally rotating sharpening stone. Finally, the edge is polished using a leather block for scalpel-like sharpness. In addition to the unique honing process, Miyabi knives utilize three different types of steel in their production. For the very best cutting performance, all Miyabi knives go through a special Cryodur hardening process. First the steel is heated and immediately frozen at hardened at -196 degrees Celcius. This process improves corrosion resistance and allows the blade to regain flexibility by tempering.
